I wasn’t really sure of what I wanted to accomplish when I developed this Avocado and Garlic sauce last night, but once I started it all came together (so to speak).

Like most of my creations, any number of substitutions can be made according to personal taste. For example, I can see this working well with roast beef slices, chicken breast, or even fish. I just happened to have a nice thick steak on hand.

The ingredient list below will serve two; you may double or triple or quadruple it to suit your situation.

Ingredient List

  • Steak (or your meat of choice)
  • Extra virgin olive oil
  • 1/2 of a large avocado
  • 2 cloves garlic, finely minced
  • salt and pepper
  • 1/4 cup pine nuts
  • 2 1/8 inch slices of jalepeño pepper, finely minced, seeds left in for maximum picante value (butch up; you can do it!)

The Cooking Process

  1. Cook your meat by your desired method. I broiled mine, but grilled is fine. That said, I would have smoked it given enough time; might try that tonight.
  2. Make the sauce while the meat is cooking:
    1. Spoon out the avocado in chunks into a small mixing bowl.
    2. Drizzle 4 or 5 drops of olive oil over the avocado chunks.
    3. Use the tines if a fork to mash the avocado and mix in the oil.
    4. Mince the garlic and jalepeño and mix in.
    5. Salt and pepper to taste.
    6. Mix in the pine nuts, being careful not to crush them with the fork, you’ll want them to give the dish a little crunch.
    7. Set the sauce aside.
  3. Put the meat servings on plates.
  4. Spoon the desired amount of sauce on top.
  5. Serve and enjoy!

That’s about it. Off the top of my head, I think a welcome addition would be a sprinkle of parmesan cheese. And a glass of red wine or a cold beer, of course. Any more suggestions? Please share in the comment section below!
